Breakfast Bites

Breakfast Bites 

1 1/2 cups chopped broccoli 

1 1/2 cups chopped cooked ham 

1 medium onion, chopped 

1/2 cup grated parmesan cheese 

6 eggs 

1/2 cup vegetable oil 

1 1/4 cups all purpose flour 

1 tbsp baking soda 

1 tsp each of dried oregano and parsley 

1/4 tsp thyme 

1/4 tsp garlic powder 

Combine broccoli, ham, onion and cheese. In another bowl, beat eggs until foamy, blend in oil. Add the dry ingredients, beat until smooth. Stir in broccoli mixture. Pour into muffin tins (either in muffin papers, or greased muffin tins). Bake in preheated oven set at 375 for 20-25 minutes or until lightly browned. When I made this recipe, it made 18 small muffins. So if you want decent size muffins, its probably best to make just 12. 

Option: add cheddar cheese
