Best Blueberry Muffins

Remember when making muffins - don't over-mix and don't worry about lumps.

Ingredients

  • 1/4 cup unsalted butter
  • 1 1/4 cup flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/2 cup sugar
  • pinch of salt
  • 200 ml buttermilk
  • 1 egg
  • 1 1/2 cup blueberries

Instructions

Melt butter and set aside to cool.

Combine dry ingredients in a bowl. In a measuring jug beat together buttermilk, egg and melted butter. Using a wooden spoon (and a light hand), pour the wet ingredients into the dry and mix gently to combine. Don't over-mix and don't worry about lumps.

Fold in the blueberries and mix lightly.  Spoon into muffin cases and bake at 350F for 20 minutes. The muffins should rise and be golden and firm on top.

Makes 9 - 12.  Enjoy!
